What ‘Farm-to-Table” means for me

When I think of home-style cooking or comfort food, the image that comes to mind is a long, rustic table set within sight of a barn. Picture cows grazing in the background and the gentle sound of sheep from a nearby pasture. The table is adorned with a bountiful spread, mismatched chairs, and a collection of well-loved cutlery—symbols of tradition, heritage, and, above all, community. There is no room at this table for pretentiousness, or status-driven place settings; only the type of bonding that comes at the end of a long evening sharing incredible food and enjoying good conversation.

At Tapestry, we strive to embody this vision in everything we do. The food we grow and the meals we inspire are rooted in these values: connection to the land, gratitude for the animals we raise, and genuine connection with the people who enjoy our products & support our work.

For us, it’s about delivering premium, pasture-raised meats directly to your door in mindfully curated boxes of cuts chosen to highlight the best recipes of every season. By skipping the middlemen, we not only provide a superior product but also forge meaningful connections with our clients. That’s why we say our approach is “fresh food on a first-name basis.”

As an avowed maximalist, I could never just offer one product, & I believe great meals start with variety. Offering just one type of meat—like lamb—might be straightforward from a farming perspective, but it wouldn’t reflect the richness of a truly fulfilling culinary experience. That’s why I provide a diverse range of products, including grass-fed beef, heritage pork, lamb, and poultry. It’s a win-win that’s beneficial for our biodiversity as well as a convenience for my clients.

These offerings allow us to honour the natural patterns of our farm’s ecosystem while helping you create memorable, seasonal meals year-round. Whether it’s a hearty pork roast in the winter or tender lamb in the spring, our curated butcher boxes ensure you’re cooking with ingredients that reflect the best of each season.


Adding Value Beyond the Basics

For those seeking convenience without compromise, we’re expanding into value-added products like bone broth and rendered pork lard. These essentials are perfect for busy families who want the benefits of nourishing, sustainable ingredients but just don’t have the time to make them from scratch.

And as we grow, we’re looking forward to deepening this connection even further by bringing more of the processing and packaging in-house. Our current processor is an amazing local small-scale operator, but our vision is to one day have complete control over the journey from pasture to plate, ensuring the highest standards of quality and care at every step. This means bringing the processing and butchering of our animals on-farm one day and keep the loop completely closed.

For the time being, by keeping our processing local—within a half-hour drive of our farm—we minimize stress on the animals and reduce environmental impact.

Culinary Education for Heritage Cuts

One of the challenges our clients face is learning how to cook with heritage cuts and pasture-raised meats. Cuts like lamb neck, oxtail, and pork hocks might be unfamiliar to modern cooks. 100% grass-fed beef requires a different cooking technique than grain-fed options, likewise, pasture raised chickens who actually use their legs and have freedom to move might seem tough when prepared the same way as a confinement-raised bird.

That’s why I’m here to support you every step of the way. From offering suggested recipes tailored to our butcher boxes to providing cooking tips and answering your questions, I’m dedicated to helping you expand your culinary repertoire.
